A female friend of mine wants to start doing some working out.
I am going to get her doing a crossfit style program of 2-3 full body circuits per day and 1-2 cardio sessions per week.

She weighs about 60-65 kg and probably 25-30% fat. I.e. she isn't particularly athletic. She is also a vegetarian.

What sort of diet should I be getting her to take on. How many calories and at what ratios?

Should she avoid starchy carbs? eat lots of protein?

Daniel, most of the crossfitter types reommend the Zone. IMHO,the Zone parameters are pretty good, but they nitpick it to death. Here are what I consider to be good guidelines, and tweak as necessary. Also see the Diet section here on the site. It was put together by Dr. Serrano, and isn't all that far off of what Berardi recommends,
