- and how to know when to trust them.

David Freedman http://www.freedman.com/ is the author of a couple important articles recently in Atlantic Monthly and Scientific American that go into why the current research in obesity and health in general is so flawed. This book goes into the general case of why experts of all types are often wrong in their published work.

I think this is an important book that ExRx readers should read in order to understand the limitations of published research. It will help you in understanding why specific advice given in the media is so often contradicted by other advice, sometimes in the same issue. Those that read FitnessRx or Science Daily probably know what I'm talking about.
