I can now do 2plates for 12 reps with deep squats. Would it be better for me to increase the weight or try to increase the reps to 15 to 20 reps. My goal is to just to maintain strength and overall fitness.

The weight for sure. Anything over 15 reps does nothing. The 12 to 15 range tends to be endurance. If you want strength don't go over 12. If you don't want to increase anymore, and all you want to do is maintain, just do 2 sets of 12 with as much as you can do now and don't increase.
