Hi Eric. I love the lentils and rice thing. I do spin offs of that all the time. I will usually take some type of grain, brown rice, barley, or the kashi mix (not the cold cereal, the actual mix you have to cook), and mix it with lentils, black eye peas, or frijoles negro or colorado. I love the combos, and they are endles. I usually book up a pot, and keep the mix in the fridge, they hold up for a while. My favorite breakfast is what I prefer in the morning and after a workout. Pre workout, usually nothing. That meal is, take a bit of some type of chopped meat, fish , whatever, put it in a tupperware (use any leftovers you have), throw in a half pound of chopped frozen spinach, broccoli, or whatever, nuke it in the microwave with the meat, pour off the excess liquid. Stir it all up, add a good pich of feta cheese, and a third of a cup the grain, bean mixture, season to taste, and throw two eggs or the euivalent in substitute over the top, mix well, and nuke it again in the microwave. It's kind of a custless quiche. I know, real men don't eat quiche, but I love the stuff. Spice it up big time with chopped garlic, etc.
If you think you need more carbs, well fine, add some fruit on the side.
