For instance...on a Thursday I go out and do some sprints, then on Friday I have a workout were I do squats, deadlifts, lunges, etc. Is this a good idea or does the body need a day inbetween the sprints and weightlifting days?

I've never done HIIT, but I suspect it depends on a number of factors including you medabolism, your diet, how much sleep your getting, what kind of shape your in, and what your body is used to. Sorry I don't have a simpler answer.

Experience is the best teacher. Try it, and see how it goes. If you find that the sprints compromise your next day leg workouts, you'll have to schedule them for another day.

I just did HIIT last night for 8 minutes, going as hard as possible throughout. By the last half of the final sprint, my quads were cramping up big time. Today, they are still slightly tight.

Personally, I treat HIIT as if it were another leg excercise. I usually do it after I finish any strength training.

I think it depends on the person. I feel a little burn in the legs doing HIIT, but there are no after effects. I don't get sore or anything. I can do it one day and then squat heavy the next.
