Guys...
My biceps are extremely long. Yes, I know there's nothing I can do about it, yada yada, high insertion point yada yada.

Just wondering what would happen if I stopped training them specifically. Would they shorten a little?

Muscle changes length only when contracting and returning to resting length. Training doesn't effect the length, it's because of all those silly genes and tendons and fibrous structures you happen to have. Maybe if you intentionally mess up your elbow mobility it might seem shorter because you can't fully extend your elbow anymore.

You could rip your bicep and maybe it will reattach in a different place. It happened to a friend of mine and it looks pretty good. It looks quite different from his other arm though.

I'll swap, mine are extremely short. Not much use unless you walk around in a front double biceps pose all day.
