There is no evidence that sodium has any effect on most people. There is a small segment of the population that is sensitive to it, but others are not. Blood pressure issues and sodium sensitivity are more genetics than anything.

You can do any of those things. You can increase or decrease weight between sets while changing reps to match, you can do the same weight, or you can even do less sets of more exercises. Any of those things work.

I second the pullup bar, they're $20 and very useful. For legs, try pistols. Hold something to steady yourself if you need to.

I'm not the most knowledgeable about football, but that looks like a pretty good program to me. You have a lot of exercises in there, so don't do too many sets too close to the first game. Be sure to prioritize practice and not let the weights interfere. Bench press would probably be a good addition...

Multiple protein bars per day is fine. Your diet seems a little short on fats though. I also don't think that is enough food.
