Merry Christmas!!

Christmas cake / pudding k-word experiment! try making your own with these rough guidlines!

wholemeal flour ( see spelt flour if you are coeliac )
homemade butter ( recipie in diet and nutrition )
mixed fruit and peel, cherries, any kind of nuts if you are not allergic,
brandy or brandy flavouring if you don't like alchohol or vanilla essence, cinnamon and nutmeg to make it warm and spicy.
brown sugar ( just like a young woman should ) or honey.
to get a darker more rich cake than a normal fruit cake :0) try adding a little molasses and or date syrup or pureed medjool dates ( they are the best as they are moist and sweet without the glucose coating ).

this has to be a good consistency with lots of the fruit and nuts, as i'm sure you have seen from other recipies / samples. the pudding has more butter and fruit / date syrup / molasses than the cake and often contains dripping or lard. i prefer dripping as it makes it nice and calorific good for this time of year!
wholemeal flour of any kind is better for you because it tastes better! and something to do with the glyceamic index for people who don't exercise as much!
