I once red that you shouldn't excercise on a daily basis but more something like 1 day excercise and 1 day rest to give the muscles time to regenerate. Is this the same for running ? I mean is it unhealthy to run day by day for the leg muscles ? Also are there any visible advantages to stretching let's say twice a day (morning/evening) to stretching only before the actual excercise (once at two days) ?

You shouldn't weight train the same muscles two days in a row, but you can train different muscles on consecutive days. Also, can do cardio (like running) two or more days in a row, depending on volume and intensity, but 7 days a week would be pushing it.
Stretching on the other hand you can do pretty much as much as you want. Just don't stretch hard immediately before heavy lifting (light stretching is okay).
