Has anyone adopted Bison as a staple in their diet? I tried some fresh Bison ribeye not long ago and it was excellent. After doing some research I found it is very low in sat fat, and actually leaner than chicken.
As an avid hunter, naturally I booked a hunt immediately to fill up my freezer. Since I will have somewhere around 1000#'s of the stuff soon I figured I would see if anyone else had experience.

I'm sure bison is very healthy but the saturated fat reduction is not the reason. I fact, ancient people used to go to great lengths to hunt big game specifically because of the higher fat content relative to smaller prey. They used to preferentially eat the fattier cuts and used the huge fat layers to make pemmican and for cooking.

I'm not "avoiding" saturated fat. Nothing wrong with a reduced amound compared to other red meats.

I'm going to Colorado, but you can hunt them mostly anywhere in the western US, even Texas-although it's more of a can hunt on estate type private ranches.
But to my original question, no one eats Bison consistently?

Not every one can afford it or has access to it on a regular basis. I've never seen it in a store in Nova Scotia. My brother in Alberta eats it occasionally. It's more common to eat moose or deer here and many hunters eat it often.

I am fortunate to live near a couple of Bison farms that offer it for sale, but Venison is a cheaper alternative and another great source of quality meat.... Archery season opened Saturday... gotta get my license!

Yeah we lost our lease last summer, otherwise I would have been out there on Saturday...bummer but at least I'll have this buffalo to go after.
