Which of these three exercises performed would be less stressful on the lower back?
Seated DB Overhead press
Standing BB Overhead press
One armed DB Overhead press
My thought is with the third option. While it does require more stabilization, whenb done with effort the torso would move sideways rather than extend backwards...
Also, I've heard that seated overhead press is actually puts more pressure on your back then standing. Is this correct and is their an understandable explanation for this?

Single-arm is probably less stressful on the low back, just because the total loading is less.
I don't think seated presses are worse than standing. In fact, if you have a tendency to hyperextend your lumbar spine when pressing, seated is better, as it is easier to keep the l-spine neutral.

having your feet planted helps add stabilization, from glutes for one, that keep your lower back in place.
